A Little Something to Tempt Your Taste Buds

Peach Cobbler, Oven Fried Chicken, Double Cornbread, Waldorf Salad, Chocolate Peanut Butter Parfait, Black Bean & Cilantro Spread – these sound so good! If you are looking for some tasty recipes without the added sugars and fats, you don’t want to miss the 2014 Summer “Cooking Well with Diabetes” series…and you’ll receive recipes for these and more.

In the past, when Momma prepared those wonderful meals, people with diabetes were not allowed to eat those delicious desserts made mainly with sugars, starches and fat. At that time, not enough research had been conducted to give us the information we have today. Now, we know that people with diabetes can eat sugars and sweets in moderation.

Moderation is the key word. Sugars are easily absorbed into the bloodstream and can increase blood glucose levels quickly. A good strategy is for individuals with diabetes to balance the different kinds of carbohydrates they eat – select more non-starchy vegetables, whole grains, and whole fruits and eat fewer foods containing simple sugars (fruit juices and rich desserts).

Because diabetes is a problem with the body’s ability to use carbohydrates, a good rule of thumb is to eat about the same amounts of carbohydrates at each meal throughout the day to keep the body’s blood glucose levels more even.

So, what does this have to do the “Cooking Well with Diabetes”? Glad you asked! Cooking Well is a 4-lesson series targeted toward individuals who have type 2 diabetes, but it is beneficial to anyone who wants to learn how to make healthier recipes at home, and how to recognize healthy cooking methods. Here is the information:

– What: “Cooking Well with Diabetes” series

– When: Tuesdays and Thursdays – August 12, 14, 19. 21

– Where: Texas A&M AgriLife Extension Office, 1200-B W. Houston, Sulphur Springs

– Time: 1:30 p.m. to approximately 3:00 p.m.

– Cost: $25, payable at the first session, covers materials for all classes, recipes, cooking demonstrations, sampling, and door prizes

– Call: 903-885-3443 to sign up. The class is limited to 25, so call before the class fills up!

Topics covered in the series include “Carbohydrate Foods”, “Making Foods with Fat Better for You”, “Double-Pleasure Side Dishes – Reducing Sodium & Increasing Fiber”, and “Celebrating Sensibly with Diabetes”. In each session, I will demonstrate two recipes, and participants will get to sample three dishes! If you have been wanting to learn more about managing diabetes but have been putting it off, now is your chance to learn and have fun at the same time. One former participant stated, “I think doctors should write a prescription to attend these sessions. I learned so much!” The good news is that you don’t have to have a prescription to attend – just give us a phone call so I can make adequate preparations.

Wedding Season is Here!

If you know of anyone who is engaged to be married, or maybe already married but would like a refresher course on the marriage relationship, I have the perfect opportunity. “Twogether in Texas” marriage education workshop is one of my very favorite sessions to teach! Not only do engaged couples save $60 upon applying for a marriage license, but all participants leave with a new-found appreciation for their relationship and the skills to maintain a healthy marriage.
